Mediterranean style monkfish
Method
Cut the monkfish into pieces, not too small because otherwise it will tend to break up. Brown two cloves of roughly chopped garlic with the chilli peppers in a casserole. Add the olives and capers then cover with the Petti organic peeled datterini – organic peeled grape tomatoes and add the fish. Cook for about 25 minutes, adding the roughly chopped basil and lemon peel at the end. Season to taste and serve the monkfish.
